[protocol] `Unencoded-Digest` vs `Content-Digest`

The protocol specification suggest to sign Content-Digest. This is affected by encoding.

We may suggest using Unencoded-Digest which is introduced by https://datatracker.ietf.org/doc/draft-ietf-httpbis-unencoded-digest/
