Summary

Added asynchronous Great Sage job processing over HTTP.
Added webhook-based result delivery with retry handling and no polling.
Added job ID tracking and improved document failure handling.
Introduced PostgreSQL JSONB extracted_data for dynamic document fields.
Added backward compatibility for existing identity document fields.
Updated document/review APIs and UI to support dynamic extracted fields.
Added E2E testing setup and architecture documentation.
