Closes #8

Introduce --observe <sink> to layer write-only observability destinations on top of the primary file backend. This resolves architectural mismatches where treating Langfuse as a peer backend broke --resume and suppressed local artifacts.

- Add CompositeBackend to delegate reads to the primary backend and fan out writes to observers
- Always run file backend to guarantee local artifacts and resume support
- Deprecate --backend langfuse with a warning and transparent fallback to --backend file --observe langfuse
- Remove scattered CLI guards for unsupported Langfuse features

This simplifies the backend abstraction and makes adding future observability sinks trivial.
