In the INSPIRE Model, there is a domainExtent property [1..*] of type EX_Extent, providing the "Extent of the spatiotemporal domain of the coverage." (whereby spatio includes the vertical dimension)
This is partially redundant with the gml:boundedBy/gml:Envelope content, that is utilized by WCS for ascertaining the coverage extent.

OK, no way to replace the extent by the envelope, as there is a hard requirement in the dataspec, we'll have to keep this in the proposed metadata type
