Add `sphinx.ext.autodoc` and `sphinx.ext.intersphinx` to doc config

We want to be able to use intersphinx from other projects, such as alchemiscale, to reference documented objects in stratocaster. To do this, I believe we need:

• sphinx.ext.autodoc
• sphinx.ext.intersphinx
